camping and cramming and canning, oh my!

Well, we had our grand campout adventure last week. It went about as well as the trial run, with a few twists and turns thrown in. We made it through the night and it turns out that Joel LOVES camping. We had some folks that were not members of our group (I know because I chatted them up in the line for the outhouse) and they ended up setting up camp next to us. They pulled in around 11 pm, and were still setting up their tents at 1:30 am. Our kids did not exactly sleep through the noise that went on (and neither was handling the 40 degree weather very well)  so they both ended up in the sleeping bag with Rob and I. Rob and I laughed and laughed when we woke up, the reason the noise was so loud was two of the tents were in OUR campsite. And only about ten feet away from us. Ah, adventures. We'll be going camping again soon for sure, but we are trying to get Rob's tent trailer down here so we have a heater next time-- my kids nearly turned to Popsicles even with all the extra layers and blankets I brought.

Rob has a test tomorrow. Not just any test, this is his LAST test. Ever. Of medical school. This is pretty exciting news, to say the least. I just have to say how proud I am of him, he's handled the past 3 years like a champ and now we are in the homestretch. Of course, that means applying for residencies, which basically..... we are clueless. Haha, we'll just have to figure it out I guess!

I've done some canning this past week. We had a funny incident regarding our pressure cooker and now we know-- peaches should go in the water bath, not the pressure canner. So, I have about 15 jars of peaches that are only half full..... on the plus side my salsa turned out great! Between this and my sister diving into baking bread and bagels, we should be quite the domestic women before too long!

Sounds like fun! Congrats Rob! Good luck with the test and residency. Way to go domestic with canning! Yeah, we like the water bath for peaches and pears too. Lessons learned :)
